MOIST, SWEET & OH SO CARROTY!

 

I’ve never really been a fan of carrot cake because the ones I’ve bought just didn’t meet my expectations. But for the first time, I decided to bake my own and trust me, this is the only carrot cake recipe you’ll ever need!

Ingredients:

·      1 cup sugar

·      1 cup milk

·      2 eggs

·      1/3  cup melted butter (unsalted)

·      ½ cup vegetable oil

·      1 tsp vanilla extract

·      3 cups A.P flour

·      2 tsp baking powder

·      1tsp baking soda

·      1& ½ tsp cinnamon powder

·      ½ tsp salt

·      ½ tsp nutmeg

·      5 small carrots (grated) or 1& ½ cup grated carrots

·      Walnuts (optional)

 

Procedure:

1.    Preheat your oven to 180°C (350°F). Grease and line a loaf or round cake pan.

2.    In a large mixing bowl, whisk together the sugar, eggs, melted butter, vegetable oil, milk, and vanilla extract until smooth and well combined.

3.    In another bowl, combine the flour, salt, baking powder, baking soda, cinnamon, and nutmeg. Stir until evenly mixed (please follow the measurement above).

4.    Gradually add the dry ingredients into the wet mixture. Gently fold until just combined, avoid over mixing.

5.    Fold in the grated carrots and chopped walnuts (if using).

6.    Pour the batter into the prepared pan and smooth the top. I topped mine with the walnuts.

7.    Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.

8.    Let the cake cool in the pan for 10–15 minutes before transferring to a wire rack. Serve as is, or top with cream cheese frosting if desired.

  4. Oh I have always been a big fan of carrot cake. This sounds like a great variation. But will have to wait until fall to make anything like this, way to hot in my apartment for using the oven LOL.
