RUSSIAN OLIVIER SALAD (САЛАТ ОЛИВЬЕ).

Monday, January 9, 2023 Lagos, Nigeria

I lived in Russia for almost a decade. The first time I had this salad was at a friend’s house during the New Year celebration and I absolutely loved it. I have always planned on visiting Russia one day but, with all that has been going on I can’t. This New Year celebration reminded me of this salad and I decided to make it.

List of ingredients:

·      3 potatoes (I used sweet potatoes)

·      2 carrots

·      4 boiled eggs

·      2 fresh cucumbers

·      1 can of peas

·      ½ cup fully cooked ham, or 6 turkey hotdogs (if you’re using hotdogs please boil for 10-15mins)

·      1 cup mayonnaise

Procedure:

1.    Wash your potatoes and carrots. Bring a large pot of water to a boil. Add potatoes and carrot and cook until potatoes and carrots are tender. In a separate pot boil eggs 20 to 30 minutes. Drain and let it cool.

2.    Chop potatoes and carrot into cubes. Peel and chop eggs.

3.    Chop the cucumber into cubes.

4.    Chop the ham/hotdogs into cubes.

5.    Drain the peas from the can

6.    In a salad bowl (or any bowl) add you potatoes, carrots, cucumber, eggs, peas, and ham. Add a cup of mayonnaise and mix till all ingredients is fully coated.

Enjoy.

  8. Oh I always wanted to go to Russia but yes not now. Not since Putin has been in power. So sad all that is happening in that part of the world. Very scary and very sad. But this sounds sooooo yummy!! Why were in Russia for a decade, are you from there?

    1. Actually saddens me with what's going on over there especially seeing friends in Ukraine struggle day by day. I was in Russia to study computer programming. Despite what's happening over there they have really good schools.
