UKRAINIAN APPLE CAKE (ЯБЛУЧНИК).

    Oh boy do I love this cake. I recently got in touch with one of my Ukrainian friend early this year and we talked for hours about every and anything and this cake was part of our conversation and she shared her recipe with me and I absolutely loved it. She gave me permission to share this on my blog and I am grateful for her and the strength she has with what is going on in Ukraine.  


List of ingredients:
          
          Cake: 
  • 1 ½ cup all-purpose flour
  • ¼ cup white sugar
  • 2 tsp. baking powder
  • ¼ tsp. salt
  • ½ cup unsalted butter (firm)
  • ⅓ cup yogurt 
  • 1 large egg, beaten
  • 3 large apples - peeled, cored, and thinly sliced
       
       Cinnamon Streusel Topping: 
  • ½ cup brown sugar
  • 2 tbsp.. flour
  • 2 tsp. powder cinnamon
  • 2 tbsp. unsalted butter (firm)

Procedure:

            Cake:
  1. In a mixing bowl add flour, sugar, baking powder, salt and mix together.
  2. Add butter and mix with hand until flour mixture is crumbly. 
  3. In a separate bowl add yogurt, egg and mix.
  4. Add egg mixture into flour mix and whisk gently. 
  5. Oil an 8 inch springform round pan with coconut oil. Add the cake mixture and spread evenly. 
  6. Layer apples over top in neat rows, overlapping slightly.
Preheat the oven to 180 °C for 10mins while you make the Cinnamon Streusel Topping


         Cinnamon Streusel Topping:
Whisk brown sugar, flour, cinnamon and butter together in a bowl.  Spread on top of apples.

Bake for 25 - 30mins in 180 °C oven.
