BRAZILIAN BRIGADEIRO.


 These classic Brazilian chocolate truffles are rich, creamy, and irresistibly indulgent. Made with just a handful of ingredients, they’re a staple at celebrations in Brazil, from birthday parties to festive gatherings. They’re incredibly easy to make and require no baking.

Ingredients

  • 1 can (395g) sweetened condensed milk
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon butter (plus extra for greasing)
  • 1 teaspoon vanilla extract (optional)
  • Cocoa powder for coating

Instructions

1.    In a medium saucepan, add the sweetened condensed milk, cocoa powder, and butter. Stir well to combine before turning on the heat to avoid lumps.

2.    Place the saucepan over medium-low heat and cook, stirring constantly. Make sure to scrape the bottom and sides to prevent burning. After about 10-12 minutes, the mixture will thicken and start pulling away from the sides of the pan.

3.    The brigadeiro is ready when you can run a spatula through the mixture and it holds its shape for a couple of seconds before coming back together.

4.    Transfer the mixture to a lightly greased plate or bowl. Let it cool completely at room temperature (about 30-45 minutes).

5.    Lightly grease your hands with butter, then scoop small portions (about 1 tablespoon each) and roll into smooth balls.

6.    Roll each ball in cocoa powder until fully coated, then place in mini cupcake liners if desired.

Tip: You can switch up the coating with chocolate sprinkles, crushed nuts, or shredded coconut.
